TAIWANESE COLD SESAME NOODLES

Taiwanese cold noodles (涼麵 or 麻醬麵) are a beloved summer staple—light, refreshing, and packed with nutty sesame flavor. Commonly found at convenient stores or night markets, it’s traditionally served chilled with julienned cucumber, egg, and a savory sesame-garlic sauce. Simple, satisfying, and perfect for beating the heat.

You can simply recreate this classic dish with NOMMii Silky Sesame Noodles. 

🛒 INGREDIENTS

  • 1 pack NOMMii Silky Sesame Noodles
  • 1 small cucumber and ½ carrot, all julienned
  • handful of bean sprouts (blanched)
  • 1 egg (boiled or made into a thin omelette and sliced)
  • 1 tsp black vinegar (optional for extra tang)
  • toasted sesame seeds & scallions for garnish

🍳 INSTRUCTIONS

1. COOK THE NOODLES

Boil NOMMii noodles per package instructions. Once cooked, drain and rinse under cold water until completely cool. Drain well.

2. PREPARE THE TOPPINGS

While noodles cool, slice the cucumber, carrot, and egg. If using bean sprouts, blanch them quickly and let them cool.

3. ASSEMBLE THE DISH

  • In a bowl, toss the cooled noodles with the sesame sauce pack. Add a splash of vinegar if you like a tangier flavor;
  • Arrange cucumber, egg, and other toppings on top. Sprinkle with sesame seeds and scallions for garnish. 

4. SERVE CHILLED

Mix everything together right before eating. And enjoy! 

FUN FACT

In Chiayi (嘉義), locals sometimes ask for “white vinegar” on their cold noodles—but it’s not vinegar at all. It’s actually mayonnaise!
